Ingredients

  • 5 piece(s) Whole wheat bread
  • 15 tbsp Unsalted butter
  • 1.2 tsp Ground cinnamon
  • 1.2 tsp Ground nutmeg
  • 30 cup Brown sugar
  • 120 g Fresh cranberries
  • 60 g Chopped toasted walnuts
  • 2 piece(s) Eggs
  • 1 piece(s) Egg white
  • 360 ml Skim milk
  • 1.2 tsp Salt
  • 5 tbsp Vanilla extract
  • 1 tsp Orange zest

Instructions

  1. Cut the whole wheat bread into small cubes about one inch in size.
  2. Mix the melted unsalted butter evenly with ground cinnamon and ground nutmeg. Put the bread cubes into a large bowl, pour in the butter mixture, and gently toss until evenly coated.
  3. Beat the whole eggs and egg whites. Add skim milk, brown sugar, salt, and vanilla extract, and mix well.
  4. In a nonstick baking dish lined with parchment paper or greased, combine the bread cubes, dried cranberries, and chopped toasted walnuts.
  5. Pour the milk-and-egg mixture evenly over everything, then let it rest for several minutes until the bread absorbs it.
  6. Oven: Preheat to about three hundred fifty degrees Fahrenheit and bake until golden and set; a toothpick inserted comes out without wet batter.
  7. Microwave: Heat on high until set.
  8. Remove and let cool slightly, sprinkle with orange zest, then serve.
