Ingredients

  • 1/2 cup Rolled Oats
  • 2 cups Almond Milk, unsweetened
  • 1 medium Banana
  • 1 tsp Baking Powder
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Pure Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/2 cup Frozen Blueberries
  • 1 tbsp Olive Oil

Instructions

  1. Add the oats, almond milk, banana, baking powder, apple cider vinegar, maple syrup and vanilla extract to a blender and blend until a thick batter is formed.
  2. Pour batter into a large bowl and fold in the blueberries.Let the batter sit for approximately 5 minutes to thicken.
  3. Heat a pan over medium heat and add the olive oil.
  4. Once the oil is hot, pour ⅕ of the batter into the pan.
  5. Cook for 2 minutes or until the edges start to brown and bubble.
  6. Flip the pancake and cook for an additional minute. Repeat until the batter is used up.
