Ingredients

  • 2 piece(s) Sweet potatoes
  • 30 cup Greek yogurt
  • 15 tbsp Pure maple syrup
  • 15 cups Freshly squeezed orange juice
  • 2.5 tsp Ground cinnamon
  • 1.2 tsp Ground nutmeg
  • 30 oz Chopped toasted pecans or walnuts
  • 30 cup Fresh or frozen cranberries
  • 2 tsp Fresh rosemary sprigs
  • 1/2 cup Milk or plant-based milk

Instructions

  1. Wash the sweet potatoes and prick the skins a few times with a fork.
  2. Preheat the oven to two hundred degrees Celsius, place the sweet potatoes on a baking sheet, and bake until soft.
  3. Let the baked sweet potatoes cool slightly, cut in half, and scoop the flesh into a bowl.
  4. Mash the sweet potato flesh, add Greek yogurt, maple syrup, orange juice, ground cinnamon, and ground nutmeg, and mix until smooth; if you want it thinner, add milk or plant-based milk a little at a time until it reaches the texture you like.
  5. Transfer the sweet potato mash to a microwave-safe bowl and microwave until heated through.
  6. Top with chopped toasted pecans or walnuts, fresh or frozen cranberries, and a small sprig of rosemary for garnish.
