Ingredients

  • 1/2 cup Rolled Oats
  • 1 tbsp Chia Seeds
  • 1/2 tsp Instant Espresso Powder
  • 1 tbsp Pure Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/2 cup Almond Milk, unsweetened
  • 1/4 cup Vegan Greek Yogurt
  • 2 tbsp Cocoa Powder, unsweetened
  • 1 tbsp Cacao Nibs
  • 1/4 tsp Salt

Instructions

  1. Add the oats, chia seeds, espresso powder, salt, ½ of the maple syrup, vanilla, and almond milk to a bowl, and stir well to combine. Cover and refrigerate for at least 4 hours or overnight.
  2. In a small bowl, mix together vegan Greek yogurt and the remaining maple syrup.
  3. Starting with the oat mixture, layer in a glass jar with the yogurt mixture. End with the yogurt layer on top.
  4. Dust a thin layer of cocoa powder over the yogurt and sprinkle with cacao nibs.
