Ingredients

  • 2 cups Water
  • 5 tbsp Soy Sauce
  • 2 tbsp Honey
  • 1 cup Cornstarch
  • 85 g Chicken Breast Fillet
  • 1 tbsp Mixed Vegetables, frozen
  • 1/4 cup Brown Rice

Instructions

  1. Preheat the oven to 180°C / 350°F.
  2. First, set aside 1 tbsp. of the water. Then, place the soy sauce, remaining water and honey in a small pot, cover with a lid and bring to a boil.
  3. Once the mixture begins to boil, remove the lid and cook for an additional minute.
  4. In the meantime, mix the cornstarch with the tbsp. of water and use it to thicken the sauce. Let cook for about 1 more minute.
  5. Place the chicken breast in a casserole dish (11 x 7 in. / 21 x 15 cm) and coat with half of the sauce. Cook the chicken on the middle rack for approx. 30 minutes.
  6. In the meantime, prepare the mixed vegetables and rice according to the package instructions. Set aside one tbsp. of the sauce in a bowl.
  7. Once the chicken has cooked, use two forks to pull it apart.
  8. Mix with the rice, vegetables and remaining sauce and cook on the middle rack for approx. 15 minutes.
  9. Finally, drizzle the sauce you set aside over the casserole and serve.
