Ingredients

  • 1/4 cup Sweet Potato
  • 1 medium Apple
  • 2 tbsp Lemon Juice
  • 5 cup Almonds
  • 2 tbsp Almond Butter

Instructions

  1. Preheat the oven to 360°F (180°C).
  2. Cut the sweet potato lengthwise into finger-thick slices.
  3. Place the slices onto a baking sheet lined with baking paper and cook on the middle rack for approx. 15 minutes.
  4. In the meantime, remove the seeds from the apple, cut into small cubes, and combine with the lemon juice.
  5. Chop the almonds.
  6. Spread the cooked sweet potato slices with the almond butter, top with apple cubes, and garnish with almonds.
