Pea Patties with Dip

Ingredients

  • 1/2 cup Frozen Peas
  • 1/2 medium onion Onion
  • 1 piece(s) Garlic Clove
  • 1 tbsp Olive Oil
  • 1/2 tsp Fresh Basil
  • 1/4 cup Chickpea Flour
  • 1 tsp Baking Powder
  • 1/4 cup Soy Yogurt
  • 1 cup Lemon Juice
  • 1/4 tsp Salt and Pepper

Instructions

  1. Preheat the oven to 180°C / 360°F.
  2. Prepare the peas according to the package instructions.
  3. Peel the onion and garlic and cut the onion into cubes.
  4. Heat the olive oil in a pan, add the onion and crush half of the garlic clove into the pan. Sauté for approx. 3 minutes.
  5. Purée the sautéed onions and garlic together with the peas, basil, salt and pepper.
  6. Combine the purée with the chickpea flour and baking powder. Use your hands to form small patties out of the dough.
  7. Place the patties on a baking sheet covered with baking paper and bake for approx. 15 minutes. Flip the patties halfway through cooking.
  8. In the meantime, create the dip by crushing the remaining garlic and combine with the soy yogurt, lemon juice, salt and pepper.
