Ingredients

  • 3 piece(s) Sweet potatoes
  • 100 g Whole wheat breadcrumbs
  • 2.5 tsp Ground cinnamon
  • 1.2 tsp Ground cloves
  • 1.2 tsp Ground nutmeg
  • 1.2 tsp Sea salt
  • 15 tbsp Extra-virgin olive oil
  • 15 tbsp Coconut oil
  • 60 g Chopped dried cranberries
  • 60 g Chopped walnuts
  • 60 g Chopped pecans
  • 2 tbsp Fresh cranberries
  • 1/2 tsp Rosemary sprigs
  • 2 tbsp Powdered sugar
  • 1 tbsp Maple syrup

Instructions

  1. Wash the sweet potatoes, then microwave until very soft, or bake in the oven until fully cooked
  2. Let the sweet potatoes cool slightly, peel, and mash into a smooth purée
  3. Stir in cinnamon, ground cloves, ground nutmeg, and sea salt until evenly combined; optionally mix in some chopped dried cranberries and chopped nuts
  4. Divide the sweet potato mixture into equal portions and shape into thick round patties
  5. Coat the surface evenly with whole-wheat breadcrumbs
  6. Pan-fry: add olive oil or coconut oil to a skillet over medium heat, cook each side until golden
  7. Bake: bake in the oven until both sides are golden, flipping once halfway through
  8. Air-fry: air-fry until golden and crisp, flipping halfway through
  9. After cooking, optionally dust with powdered sugar, drizzle with maple syrup, and garnish with dried cranberries and rosemary
