Ingredients

  • 2 oz Pork chops
  • 1 piece(s) Sweet potato
  • 8 piece(s) Baby potatoes
  • 1 piece(s) Orange
  • 60 g Dried cranberries
  • 3 tsp Rosemary
  • 1 tsp Cinnamon stick
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper
  • 15 tbsp Extra-virgin olive oil
  • 15 tbsp Honey or maple syrup

Instructions

  1. Preheat the oven to a hot temperature
  2. Pat the pork chops dry, then season both sides with sea salt and black pepper
  3. Add a little olive oil to a skillet, heat over medium-high, then sear the pork chops until golden on both sides
  4. Spread sweet potato chunks, baby potatoes, and orange slices over the bottom of a baking tray, sprinkle with dried cranberries, then add rosemary and a cinnamon stick
  5. Place the seared pork chops on top of the vegetables
  6. Bake until the pork is cooked through and the vegetables are tender, turning the vegetables during baking
  7. Remove and let rest briefly; drizzle with a little honey or maple syrup if desired
  8. Plate and garnish with rosemary leaves
