Ingredients

  • 6 piece(s) Whole wheat bread slices
  • 110 g Cooked turkey
  • 120 g Onion
  • 120 g Celery
  • 120 g Fresh mushrooms
  • 1/4 tsp Black pepper
  • 2 piece(s) Eggs
  • 360 ml Low-fat milk
  • 120 ml Low-sodium chicken broth or vegetable broth
  • 1 cup Flour
  • 1 tbsp Olive oil
  • 120 g Low-fat cheddar or Monterey Jack cheese
  • 60 g Greek yogurt
  • 1/2 tsp Fresh rosemary or thyme
  • 2 tbsp Pomegranate seeds

Instructions

  1. Lightly grease the baking dish with a little olive oil. Cut whole-wheat bread into cubes and spread about half over the bottom of the dish.
  2. Mix ground turkey, onion, celery, Greek yogurt, and black pepper. Spread over the bread cubes.
  3. Top with the remaining bread cubes and gently press down.
  4. Mix eggs with low-fat milk and pour over the bread cubes. Cover and refrigerate overnight.
  5. Preheat the oven.
  6. Heat olive oil in a skillet. Sauté mushrooms until softened, add flour and cook briefly, then pour in all the stock and stir until thickened. Add rosemary or thyme.
  7. Spoon the mushroom sauce over the bake.
  8. Brush a slice of whole-wheat bread with a little olive oil, cut into small pieces, and sprinkle over the top.
  9. Bake until golden and set. Remove, sprinkle with cheese, let rest, then sprinkle with pomegranate seeds before serving.
